type='text'>最近附近很多从瓜雪跑来开餐馆的，差不多每家都有这一道南乳花肉，一般上附近的都是买南乳排骨，因为我用的排骨都是事先腌制好的，所以当要弄“南乳排骨”时，只要将排骨加块南乳搅和，然后炸脆它就行了。这南乳花肉制作也很简单，几分钟就可以搞定了，但要吃的时候才将它炸脆就行了。做法：花肉 1kg，蒜茸 1汤匙，鸡蛋 1粒。面粉 1汤匙，薯粉 3汤匙。调味料：南乳 3块，南乳汁 1汤匙，姜汁 半汤匙，五香粉 半茶匙，胡椒粉 1/4茶匙，麻油 半汤匙，鸡精粉 半茶匙。做法：花肉去皮，切成条状，厚度大概 2 cm，这样比较容易熟。将花肉和全部材料，调味料一起混合，最后才放面粉和薯粉搅和，腌制隔夜。烧热油镬，用中火将腌制好的花肉炸至脆身，捞起隔油，切块上碟即可。因为南乳的关系，所以炸的时候，开始油热了就可以下去炸了，油不要太热，火不能太猛，免得花肉还没熟，外皮就被炸黑了。呵呵~~ 说实话，</summary><link rel='replies' type='application/atom+xml' type='text'>最近用到多利鱼肉，发现这东西的可塑性满大的，以前曾接触过，但当时的厨房经验还不够，没发现它的价值。经过腌制，炸脆，可以弄出好几样的菜，不晓得能不能弄出七十二变来。。。这道桔汁鱼片非常简单，做法如下：材料：多利鱼 1块，斜切成片，然后用 1汤匙 酱油，半茶匙 胡椒粉，麻油 1汤匙，混合腌制。大葱丝 少许，小辣椒 1根切粒。调味料：桔子 2粒取汁，鱼露 1汤匙，细糖 半茶匙。做法：多利鱼片上粉，烧热油镬后，放下多利鱼片去炸，先用中火将鱼片炸脆，捞起，再烧热油，又将鱼片放下炸，以便逼出油来，然后再捞起隔油。这鱼片水分比较多，所以必须慢慢炸脆，不然就影响口感了。将炸好的鱼片摆盘，全部调味料和大葱丝，小辣椒混合，淋上鱼片即可。这就是多利鱼片了，这肉身比较白，应该是比较上等的。这图片是从“Alice 的幸福花園” 那里借来的。</summary><link 3片（切细幼），小辣椒　１条（切粒）。３。炸好的虾姑，熟麦片　１小碗。烧热镬，用小火，煮溶白兰他油，下英国咖哩粉和细盐，略炒，然后下蛋黄，转中火，快搅，使蛋黄散开且起泡，再下材料　２，当蛋黄炒至开始金黄时，放入炸好的虾姑翻炒，最后洒下熟麦片，快手翻炒均匀即可上碟。</summary><link rel='replies' type='application/atom+xml' 次焖煮的海参。在煮之前，曾去问我妈妈如何煮，但可能以前煮的时候都是没切块而且比我现在买的更大只，直接整只分二焖煮，所以没有发生海参失踪的问题。当然也有人提醒我不能焖太久，不然海参会不见。但，我怀念当年的入味滑嫩的海参，而且也准备看看海参是如何失踪的。第一次煮的时候，因浸发后的海参觉得蛮大只的，所以将它每只分切成六小块，然后和三层肉一起焖煮，结果，当三层肉煮软时，海参也跟着失踪了，偶尔发现几只小小的海参。。。这次的结果，总结原因是，海参虽然浸发了，但煮的时候，还是会缩回的，所以当切成小块时，焖煮太久就会失踪了，以前家里煮的都是比较大只的，而且也没分切太多小块，所以和猪肉一焖煮时是没问题的。第二次煮的时候，我只把海参分切成四块，然后先将三层肉焖煮好，然后用再用肉汁来焖煮海参，大概20 type='text'>最近觉得该接触一些高档次的食材了，所以从我最熟悉的海参开始下手。小时候家是开杂货店的，那时候在放饼干下都会收藏着海参，那时候的干海参至少都有5寸长一半寸宽吧，所以那时候家里常会焖煮海参来吃。后来偶尔会到大酒家吃，但吃到的海参都是不好吃，没有我妈妈煮的好吃。好吃的海参是滑溜溜的，好像一不留意就会跑到喉里去，而且都是入味的。那些口感脆脆地都是不好吃，也不入味。上个礼拜，到一间比较大型的杂货店买了九只海参，每只3寸长，1kg可要四百多块啊~！这九只要价９５大元！在浸发的时候，竟然被老鼠偷吃了两只。。。浸发海参的方法：材料：黄梨皮（约一粒黄梨的皮），半锅水（或盖过全部材料的水）做法：将黄梨皮，水和海参煮滚，然后加盖过夜。切记不能动到油！！！不然报废了。呵呵～我也是听说的，还没遇到动到油的情况会怎么样。第二天，将水和黄梨皮倒掉，换过新的水，再煮滚，然后加盖过夜。第三天，有开发胀至有些柔软，切开肚子</summary><link type='text'>肉酱炒鱼是我的招牌菜之一，因海脚人吃鱼都不喜欢用来油炸，所以煮的时候都没经过油炸。最近为了满足其他人，尝试将这道菜的鱼肉拿来炸，然后用干炒的方式来煮，想不到有预想不到的美味出现了。材料：１．红枣鱼肉 ２００ｇ（切块），水　半小碗。２．姜丝　５０ｇ，羊角豆　２条（斜切片），小辣椒 2条（切粒），大葱　半粒（切丝）。3. 香菇肉酱 1汤匙，蒜茸 2汤匙。调味料：1. 磨豆酱 type='text'>昨晚煮了一锅好粥，吃不完，舍不得就这样丢了，放进冰箱储存。之前曾听说过市面上有人卖“炒粥”，可惜至今还不曾吃过也不曾看过，今天下午将昨晚的剩粥拿来炒一炒，没想到竟然非常的好吃～！临收档前，将剩余（约４小碗的分量）的粥，都炒了打包回家慢慢享用。结果差点饱死！！材料：粥 2小碗，鸡蛋 1粒（打散），猪肉片　１００ｇ，葱花　１／３小碗，水　１小碗。调味料：１．酱油　１汤匙。２．细盐　１茶匙，鸡精粉　少许。３．麻油　少许，花雕　半汤匙。做法：烧热镬，下大约　３汤匙的油，用中火，下猪肉片炒熟，再下鸡蛋，煎至两面金黄，然后搅碎，下１汤匙的酱油伴炒几下，然后下粥，水和调味料　２，转大火，翻炒至煮滚，洒下葱花和调味料　３即可上碟。后语：煮粥我最拿手，煮饭我可不会了。</summary><link 或称炒大板北马和雪隆一带的广府鸳鸯的炒法不同，雪隆一带的米粉大多是用油炸或煎，会比较简单，如果用煎的就比较考功夫了，米粉用诈的淋汁后就比较不耐浸，而煎的就会比较香且耐浸。而北马式的通常都是和果条一起干炒，这比较考功夫了，米粉和果条必须炒出镬气，米粉炒得够功夫，淋汁后也比较耐浸。北马人称之为“大扳”，或“炒大板”。很多人都会对广府鸳鸯的称法有些误解。广府炒或广东炒，不管是广府鸳鸯，广东炒伊面，或广付炒米粉，都是淋汁的，但如果叫到鸳鸯，肯定是有两种粉，一般都是米粉和果条配。果条，广东人都称为“河”或“河粉”，而滑蛋河就是广府炒果条。很多人在常会这样叫“广府鸳鸯果条”或“滑蛋荷的鸳鸯”。“广府鸳鸯果条”，他们其实要的是“广府果条”，他们一直会把“鸳鸯”当成就是淋汁的炒法。而“滑蛋荷的鸳鸯”，其实要的是米粉和果条配的鸳鸯。如果不注意，常会炒错给对方。</summary><link 半汤匙。做法：三层肉烫一烫烧水，滤干水后和腌料混合，腌隔夜。烧热油镬，将腌好的三层肉放下炸，炸至略焦捞起隔油。烧热镬，下大约 5汤匙的油，用小火先煮溶糖，然后下蒜茸爆香，接着下八角和桂皮略炒，再下炸好的三层肉和剩下的调味料翻炒，最后才下水，水滚后，倒入锅，然后移到火炉，用小火焖煮至三层肉软。烧热镬，用大火 ，将煮好的三层肉和适量的汁 加点薯粉水 type='text'>我不是巴生人，却在巴生待了快14年了，中学六年都在巴生，曾离开几年，最终还是又来到巴生找生活。刚到巴生最初接触到的道地美食就是肉骨茶了。中学时期，老爸来带我回家度假时，偶尔会带我去吃肉骨茶，那时候都是吃瓦煲式的，要求的肉不是排骨就是三层肉，有时会加点猪肠。老爸常嫌汤太浓，因而都会加开水进去，那时候嘴没那么刁，浓汤或加了水的汤，都认为好喝。在还没深入认识肉骨茶前，除了在巴生吃过，也曾在万绕和吉隆坡。万绕，小时候，跟父亲到吉隆坡办货回程，偶尔会到那里吃肉骨茶，卖都是碗式，汤没那么浓，喝的清爽，肉都是排骨，三层肉，瘦肉和猪肠而已，配料有油条。后来毕业了，到吉隆坡甲洞工作，有时候也到外头吃肉骨茶，哪里瓦煲或碗式都有，肉也是排骨，三层肉，瘦肉和猪肠而已，汤也是清澈的，有的还打着“生骨”招牌，配料除了油条，还有卤豆卜。现在在巴生混生活了，来的时候，朋友的孙女才出世不久，现在都已经小学一年级了。</summary><link 家庭式的顾客，一大煲方便整家人吃，但因加了其他的配料，如：香菇，蘑菇，豆卜，生菜等，造成失去了原味。干式肉骨茶或海鲜肉骨茶都是后来演变出来的。干式肉骨茶，听说是来春发明的，但确实来春的干式肉骨茶会比较好吃也确有其特色，一些地方卖的其实和卤肉差不多一样。巴生人吃肉骨茶不只是吃猪肉而已，而且还懂得将猪肉分成好多个部分来吃，如：排骨，大骨，小骨，五花，三层肉，半肥瘦，软骨，猪尾，脚折，脚弯，猪章肉，猪脚筋等等。叫吃的时候记得用福建话来说。排骨，软骨，三层肉，猪尾通常最好吃也最好卖，早到的人或熟客才吃的到。大骨通常是男人吃。小骨也不错，肉不肥也不涩。半肥瘦是大腿的肉，肥瘦两分明，比较硬涩，是拿来糊弄吃不到三层肉又不懂得分别的人。</summary><link 前小时候很喜欢吃快熟面，又因家是开杂货店的，所以把全部的口味都试煮了一遍，是的，自己煮，小学的时候就已经自己煮面吃了。那时候，市场上只有几种品牌 已，有“唯一“，“金蛋面“，“美极面“，那时候，要吃咖哩的就选美极面，清汤的就金蛋面，要拿来炒得就选唯一面了。其他口味如拉沙，虾味等，都吸引不到
